The Dorsey at The Venetian is the best-executed Strip bar with a real cocktail program from Sam Ross. Downtown Cocktail Room on Las Vegas Boulevard is a low-lit escape from the Fremont Street chaos. Velveteen Rabbit in the Arts District is quirky, seasonal, run by locals — the vibe is a Portland dive with actual craft. Drinks $14 to $18 at all four, no cover.
Rooftops and hotel bars
Skyfall Lounge at the Delano (64th floor) has the best Strip view for the price of a $19 drink. Alibi at ARIA — dim, elegant, works late. Vanderpump Cocktail Garden at Caesars is more theater than substance but photogenic ($22 drinks). Skip: any Strip bar with a nightclub attached (cover you didn’t sign up for), and anywhere with 'mixology experience' in the marketing. If you want a cheap classic, casino bar wells still pour free drinks while gambling — the Palace Court bar at Caesars is a reliable seat.
