Vegas classics
The shrimp cocktail in a tulip glass was invented at the Golden Gate downtown in 1959 and still runs $6 there — the original $0.99 version is long gone but the format survives. The prime rib special is a Vegas institution: Ellis Island's off-Strip prime rib dinner is $17 for locals-in-the-know. The buffet, once dying, has come back at Bacchanal ($85), Wicked Spoon ($55) and Wynn's ($75). Late-night 24-hour coffee shop diners like Peppermill on Las Vegas Boulevard are their own genre — order the fruit platter, share it.
Northern Nevada: Basque country
Northern Nevada was settled by Basque sheepherders and the family-style Basque restaurant is its signature meal. Louis' Basque Corner in Reno serves picon punch cocktails and 5-course dinners at communal tables for $40 — soup, salad, beans, a stew, and your main. J.T. Basque in Gardnerville is the other benchmark, open since 1960. Order the lamb shank. Bring appetite; portions are set up for people who worked outdoors all day.
The lounge and the taqueria
Fine dining moved to Vegas in 1998 when Bellagio opened and it never left — Joel Robuchon, Guy Savoy, Estiatorio Milos, all real. But the parallel food story is the Mexican taqueria: Tacos El Gordo (Tijuana-style adobada, $3.25), Tacos Mexico, and the Broadacres swap meet on Sundays. Between fine dining and street tacos, there is not much in the middle that is uniquely Nevada — which is itself telling.
